Lunch Time

Mediterranean Sandwiches are great for lunch time. It's one of my favorites. Serve with a cool drink, perhaps the lemon balm sun tea, as mentioned in an earlier post. Refreshing!!





Olive oil
1/2 pound chicken tenders, cut crosswise in half
1 small tomato, cut into bite-size pieces
1/4 small cucumber, seeded and sliced
1/4 c. sweet onion slices (about 1 small)
1 T. cider vinegar
2 t. olive oil
1 t. minced fresh oregano or 1/2 t. dried oregano leaves
1 t. minced fresh mint or 1/4 t. dried mint leaves
1/8 t. salt
2 whole wheat pita breads
4 lettuce leaves (opt.)

1. Add small amount of olive oil in a non stick skillet; heat over medium heat until hot. Add chicken; cook and stir 7- 10 min. or until browned and no longer pink in center. Cool slightly.

2. Combine chicken, tomato, cucumber, and onion in medium bowl. Drizzle with vinegar and oil; toss to coat. Sprinkle with oregano, mint, and salt; toss to combine.

3. Cut pitas in half crosswise; gently open. Place 1 lettuce leaf in each pita bread half, if desired. Divide chicken mixture evenly among pita bread halves.

(Makes 2 servings -- 2 filled pita halves per serving)

I can't wait to make Lemon Balm sun tea. We always have a gallon of sun tea in the fridge, but I never thought of adding Lemon Balm. I'm going to pick some right now.

Sounds delicious! I just bought a package of frozen pre-cooked chicken breasts. That would make this even easier for me. Some days I like to cook, and some days I don't!

Your lemon balm infused water sounds marvelous! I just planted lemon balm this year and am quite pleased with how well it is taking off - now I am excited to learn about all the yummy things I can make with it. Thanks for sharing!

Jane Marie, that chicken sounds delicious, especially since DH is borderline diabetic and we need to learn to cook differently now for him.

I'm grocery shopping tomorrow, and I'll be adding a few things from your recipe to my list!

Becky, now here's something funny. I never thought of adding lemon balm to regular suntea. Of course, it makes perfect sense. I just make it with water and lemon leaves and it tastes like lemon water. I like your idea.

Rose, I'm just like you. Somedays I get inspired and cook up a storm, then go for a long time and don't want to make anything at all.

Garden Gril, My husband is diabetic II that's why we try to eat like this but don't always stick to it. Sometimes is better than not at all, is my philosophy.
